Indulge in these peanut butter and chocolate cookies, a decadent treat featuring a molten chocolate center that stands out from the rest.
Ingredients
Serves : 4 servings
- 150 g All-purpose flour
- 130 g Peanut butter
- 100 g Granulated sugar
- 100 g Brown sugar (Cassonade)
- 1 Egg
- 0 Vanilla extract (A splash of vanilla extract)
- 4 g Baking soda
- 2 g Salt
- 180 g Dark or milk chocolate (For the ganache)
- 120 g Heavy cream (Full-fat, for the ganache)
Instructions
Step 1
Preheat the oven to 175°C (350°F). Mix the butter (if using), peanut butter, brown sugar, and granulated sugar. Stir in the egg and vanilla extract.
Step 2
Add the flour, baking soda, and salt, then mix until a dough forms. Shape into 30g balls for a uniform result. (For consistent results, use a kitchen scale to weigh your dough balls.)
Step 3
Bake for 18 minutes or until golden brown. As soon as you take them out of the oven, immediately press down the center of each cookie with the back of a spoon to create a well.
Step 4
Prepare the ganache: heat the cream in the microwave (about 1 minute 30 seconds), add the chocolate, and let it sit for 1 minute. Stir until the mixture is smooth.
Step 5
Pour a spoonful of ganache into the well of each cookie. Sprinkle with a pinch of sea salt if desired.
Tips
- Properly measuring the sugar is essential to guarantee a soft, chewy interior.
- Be sure to create the wells in the cookies immediately after baking while they are still soft.
Substitutions
- Peanut butter → Almond or hazelnut butter — May slightly change the texture.
