Discover the ultimate brownie cookie recipe: crispy on the outside, fudgy on the inside. Perfect for any chocolate lover! These cookies bring together the best of both worlds—the chewiness of a brownie and the convenience of a cookie.
Ingredients
- 200 g dark chocolate
- 70 g butter
- 2 eggs
- 80 g brown sugar
- 70 g granulated sugar
- 70 g all-purpose flour
- 1 tsp baking powder
- 1 pinch salt
Instructions
- 1Melt the chocolate and butter together using a double boiler or in the microwave until the texture is smooth.
- 2In a separate bowl, whisk the eggs with the brown sugar and granulated sugar until the mixture becomes light and frothy.
- 3Stir the melted chocolate mixture into the beaten eggs, mixing well.
- 4Add the flour, baking powder, and salt. Mix until combined, being careful not to overwork the dough.
- 5Form the dough into balls and place them on a baking sheet lined with parchment paper, leaving enough space between them. (They will spread during baking!)
- 6Bake for 10 to 12 minutes at 180°C. The cookies should still be soft in the center but firm on the edges.
- 7Let them cool on the baking sheet for a few minutes before transferring them to a wire rack.
Tips
- Use dark chocolate with a high cocoa percentage for an intense flavor.
- Leave plenty of space between the dough balls because they spread as they bake.

Frequently asked questions
What kind of chocolate is recommended for this recipe?
For brownie cookies, dark chocolate is particularly recommended as it is richer in cocoa and less sweet than other types of chocolate.
Can I add nuts or chocolate chips to the brownie cookie recipe?
Absolutely, you can add nuts to recreate the texture and taste of a traditional brownie. Personally, I prefer cookies without the crunch, but I encourage you to experiment to find your own favorite version of brownie cookies.
How should I store brownie cookies to maintain their ideal texture?
To store your brownie cookies while maintaining their crispy exterior and fudgy interior, it is recommended to keep them in an airtight container at room temperature. They will stay fresh for about 3 to 4 days. If you want to keep them longer, you can store them in the refrigerator, where they will last for up to a week.
