Ingredients

  • 2 apples (grated or cut into small cubes)
  • 250 g flour
  • 30 g sugar
  • 2 eggs
  • 500 ml milk
  • 30 g melted butter
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 pinch salt
  • a splash vanilla extract
  • 1 pinch cinnamon

Instructions

  1. 1In a large bowl, sift together the flour, sugar, baking powder, baking soda, and ground cinnamon.
  2. 2In another bowl, lightly beat the eggs. Add the milk and vanilla extract, then mix well. Stir in the melted butter and finally the apples.
  3. 3Heat a skillet over medium heat and lightly grease it with a little butter or oil. Once hot, pour in a small ladle of batter.
  4. 4Cook until bubbles appear on the surface and the edges look set. Flip the pancake and cook until the other side is golden brown. (Watch the cooking closely to ensure the inside is cooked through without burning the outside.)

Tips

  • For a melting texture, grate the apples. For more crunch, cut them into small dice.
  • Serve with maple syrup, homemade applesauce, or Greek yogurt.
  • Any apple variety works, but Granny Smith adds a nice tangy touch.

Substitutions

  • 500ml milk → 350-400ml milk — For thicker American-style pancakes, reduce the amount of milk.

I recommend using firm, tart apples like Granny Smith. Sweeter varieties like Gala or Fuji are also great choices, but it all depends on your personal preference.
