Ingredients

  • 300 g silken tofu
  • 150 g dark chocolate
  • 3 tbsp maple syrup
  • 1 dash vanilla extract (a splash)

Instructions

  1. 1Melt the dark chocolate using a double boiler or in the microwave, stirring frequently. (Be careful not to burn the chocolate.)
  2. 2In a blender, combine the melted chocolate with the silken tofu, maple syrup, and vanilla extract. Blend until perfectly smooth.
  3. 3Pour the mixture into bowls or ramekins and let it rest in the refrigerator for a few hours. (Chilling allows the mousse to set and the flavors to develop.)
  4. 4Add the toppings of your choice before serving.

Tips

  • Use fresh silken tofu (often found in health food stores) for the best texture.
  • For extra crunch, add crushed hazelnuts or chocolate chips.
  • Orange zest adds a fresh note that pairs perfectly with dark chocolate.

Substitutions

  • maple syrup → honey, agave syrup, date syrup, or liquid sugar — Note that honey is not vegan.

Frequently asked questions

Can I use firm tofu instead of silken tofu?

No, it is not recommended to use firm tofu. Silken tofu has a soft, almost liquid texture that allows for a smooth and airy consistency.

Can I use a different type of chocolate other than dark chocolate?

Absolutely, you can use milk or white chocolate, but this will affect the sweetness of the mousse; adjust the amount of sweetener accordingly.

How long can I keep this mousse?

It can be stored in the refrigerator in an airtight container for 3 to 5 days.
