Apple tart is a timeless classic of French pastry. A convivial recipe featuring homemade shortcrust pastry, melting apples, and a hint of cinnamon for a truly comforting result.

Ingredients
- 250 g flour
- 150 g butter (cut into small pieces)
- 30 g sugar
- 30 g cold water (about 3 tablespoons)
- 3 g salt
- 5 pieces apples
- 4 to 5 tbsp apple compote
- 50 g melted butter
- 60 g brown sugar
- 1 to taste cinnamon (according to your preference)
Instructions
- 1In a large bowl, mix the flour with the sugar and salt. Add the butter cut into small pieces and work with your fingertips until you reach a sandy texture.
- 2Gradually incorporate the cold water while mixing until the dough forms. Shape into a ball, wrap in plastic wrap, and let it rest in the fridge for 30 minutes.
- 3Preheat your oven to 180°C (350°F). Peel the apples and cut them into thin slices.
- 4Roll out the dough with a rolling pin (neither too thin nor too thick) and spread the apple compote over it. (The thickness of the pastry will significantly change the texture of your tart.)
- 5Arrange the apple slices on the pastry, leaving a little space at the edges to fold them back.
- 6Mix the melted butter, cinnamon, and brown sugar. Generously brush this mixture over the apples.
- 7Bake for 45 minutes until the pastry is golden brown and the apples are tender.
Tips
- Let the dough rest in the refrigerator to make it easier to roll out.
- Use a pastry brush to evenly distribute the butter-sugar-cinnamon mixture.
Substitutions
- shortcrust pastry → sweetcrust pastry (pâte sablée) — Richer and more crumbly than shortcrust pastry.

Frequently asked questions
What type of apples should I use for my tart?
Opt for apples that hold their shape well during baking, such as Gala or Granny Smith for a more tart flavor. Personally, I prefer Granny Smith.
Should I precook the apples before putting them in the tart?
It is absolutely not necessary to precook the apples. By adding them raw, they bake at the same time as the pastry, creating a crisp texture and a fresh, fruity flavor.
What is the best type of pastry for an apple tart?
A shortcrust or sweetcrust pastry works very well. You can make it from scratch or buy a ready-made version.
Can I add other ingredients to my apple tart?
Absolutely, you can add walnuts, raisins, or other fruits according to your preferences.
