Ingredients

  • 500 ml coconut milk (with 17-20% fat content)
  • 50 g sugar
  • 30 g cornstarch
  • a splash water (to dilute the cornstarch)
  • 1 pinch salt

Instructions

  1. 1Dilute the cornstarch in a little cold water to avoid lumps. (Never pour cornstarch directly into hot liquid.)
  2. 2Pour the coconut milk into a saucepan, then add the sugar and a pinch of salt. Heat gently while stirring.
  3. 3When the mixture is hot, pour in the diluted cornstarch while stirring constantly.
  4. 4Continue stirring over medium-low heat until the custard thickens and becomes smooth. (Let it cook for another minute after it starts boiling to stabilize the custard.)
  5. 5Remove from heat, then pour the custard into ramekins or a bowl.
