Discover this delicious chocolate hazelnut fudge, a perfect marriage of melting chocolate and crunchy nuts. A simple and elegant recipe to delight chocolate lovers.
Ingredients
- 350 g dark chocolate
- 100 g hazelnuts
- 230 g sweetened condensed milk
- 130 g almond butter
- 1 pinch salt
Instructions
- 1Preheat the oven to 175ºC (350°F). Spread the hazelnuts on a rimmed baking sheet and toast them for 13 minutes.
- 2Immediately transfer the hazelnuts to a clean, thin kitchen towel. Fold the towel and rub the nuts vigorously with your hands to loosen the skins. Coarsely chop them.
- 3Combine the condensed milk and chocolate in a bowl and heat in the microwave for 1 minute to 1 minute 30 seconds. Mix well until smooth.
- 4Add the almond butter and a pinch of salt. Stir in the chopped hazelnuts. (For thicker pieces, use a 20x10 cm (8x4 inch) loaf pan.)
- 5Transfer the fudge into a mold (ideally 20x20 cm or 20x10 cm for extra thickness) lined with parchment paper and press down to distribute it evenly.
- 6Place the fudge in the refrigerator for 1 hour until set. Let it come back to room temperature before slicing.
Tips
- Use high-quality chocolate (ideally between 55% and 60% cocoa) as the chocolate flavor is the star of this raw recipe.
- Check that your condensed milk contains only milk and sugar, without unnecessary additives.
- Always use parchment paper to ensure the fudge releases perfectly from the pan.
Substitutions
- almond butter → hazelnut or peanut butter — Provides a more pronounced nutty flavor.
- hazelnuts → pecans or almonds — A delicious crunchy alternative.

Frequently asked questions
Can I replace the almond butter with another nut butter?
Almond butter is a safe bet for this recipe and I recommend trying it at least once. However, peanut butter or hazelnut butter are great alternatives, though they will provide a more pronounced flavor.
Can I use other types of nuts instead of hazelnuts?
Absolutely. Almonds, pecans, or walnuts are all excellent alternatives.
How should I store the fudge and how long will it last?
Store the fudge in an airtight container in the refrigerator. It generally keeps well for about 2 weeks.
Is it possible to make a vegan version of this chocolate fudge?
It is certainly possible by using a vegan condensed milk (like coconut-based), but it can be hard to find. Good news though, I have a vegan chocolate fudge recipe available on my blog!
