Ingredients

  • 130 g all-purpose flour
  • 150 g dark chocolate
  • 3 ripe bananas
  • 60 g butter
  • 80 g brown sugar
  • 1 egg
  • 50 g cocoa powder (preferably unsweetened)
  • 1 tsp baking soda
  • 1 pinch salt
  • 1 tsp vanilla extract
  • 1 handful chocolate chips (for topping)

Instructions

  1. 1Preheat your oven to 180°C (350°F). Grease a loaf pan and set aside.
  2. 2Melt the chocolate in a double boiler (bain-marie). Stir regularly to achieve a smooth texture.
  3. 3In a medium bowl, whisk together the flour, cocoa powder, baking soda, and sea salt. Set aside.
  4. 4In a large bowl, mash the ripe bananas with a fork. Add the melted butter and mix until well combined.
  5. 5Stir in the brown sugar, egg, and vanilla extract. Mix until the consistency is smooth.
  6. 6Fold the dry ingredients into the wet ingredients, being careful not to overmix. Fold in the melted chocolate.
  7. 7Pour the batter into the prepared loaf pan. Sprinkle a handful of chocolate chips over the top.
  8. 8Bake for 50 to 65 minutes, or until a toothpick inserted into the center comes out clean. (Oven times may vary; start checking for doneness after 45 minutes.)
  9. 9Remove the pan from the oven and place it on a wire cooling rack. Let the cake cool for 15 minutes before serving.

Tips

  • Bananas are essential for the success of this cake. It is important to use enough bananas, but above all, they must be very ripe. Forget green or bright yellow bananas; choose ones with skins that have turned brown or spotted. At this stage, bananas are naturally sweet and creamy, which is crucial for a rich and moist loaf.
  • Avoid overmixing the batter once the flour is added to keep the cake light and airy.
  • For an even more intense flavor, you can increase the amount of chocolate up to 200g.

Substitutions

  • dark chocolate → milk or white chocolate — Will provide different, sweeter flavor profiles.

Yes, it is entirely possible to omit the sugar. The ripe bananas and chocolate already provide a significant amount of natural sweetness. The cake will be less indulgent but still very pleasant.

Is cocoa powder mandatory in this recipe?

No, cocoa powder is not mandatory. It enriches the flavor and color, but you can make the recipe without it if you prefer a plain version.

What type of cocoa powder should I use?

It is recommended to use unsweetened cocoa powder for a deeper, purer chocolate flavor without overloading the cake with sugar.
