Biscoff Tiramisu (Speculoos)
The Biscoff tiramisu brilliantly revisits the traditional Italian dessert. An incredibly delicious treat where the smoothness of the cream blends perfectly with the spiced notes of the cookies.
Ingredients
- 250 g mascarpone
- 3 eggs
- 80 g sugar
- 20 cl coffee
- 20 Biscoff cookies (Speculoos)
- 50 g Biscoff cookie butter (Speculoos spread)
- a few Biscoff cookies (Speculoos) (for garnish)
Instructions
- Prepare the coffee and let it cool down completely.
- Separate the eggs, placing the whites in a large bowl and the yolks in another.
- Whisk the egg yolks with the sugar until the mixture turns pale and creamy. Add the mascarpone to the yolk mixture and whisk until the cream is smooth and consistent.
- Beat the egg whites until stiff peaks form and gently fold them into the mascarpone preparation, taking care not to deflate them to keep the cream light and airy.
- Briefly dip the Biscoff cookies into the coffee.
- Assemble the tiramisu by placing a layer of soaked cookies at the bottom of a dish, adding dollops of cookie butter in a few spots (adjust according to your taste), then cover with a layer of mascarpone cream.
- Repeat the process until all ingredients are used, finishing with a layer of cream.
- Refrigerate the tiramisu ideally overnight to allow it to set. Before serving, sprinkle the top with crushed Biscoff cookies.
Tips
- Use eggs and mascarpone at room temperature for a smoother cream.
- Opt for high-quality or artisanal cookie butter for a better flavor.
- Dip the biscuits very briefly in the coffee to prevent them from becoming too mushy.
Substitutions
- Biscoff alone → raspberry coulis: Provides a touch of freshness and acidity.
- coffee → salted caramel sauce (drizzled): Adds a sweet and salty contrast.
Frequently asked questions
How can I intensify the Biscoff flavor in the tiramisu?
To further enhance the Biscoff flavor in your tiramisu, a delicious tip is to slightly warm up 50g of cookie butter and spread it over the top of the dessert before letting it rest in the refrigerator. This extra layer will set as it cools, creating a rich and flavorful texture. For a perfect finish, don't forget to crumble a few cookies on top just before serving.
Can I add fruit to the Biscoff tiramisu?
Absolutely, fruits like raspberries, pears, or caramelized apples can add a fresh and slightly tangy note that complements the spices of the Biscoff cookies very well.
