- 3 u eggs
- 80 g sugar
- 120 g almond flour
- 100 g all-purpose flour
- 100 g melted butter
- 1 tsp baking powder
- a splash vanilla extract
- 1 pinch salt
- 6 to 8 u fresh figs
- a few hazelnuts (coarsely chopped)
Instructions
- 1Preheat the oven to 180°C (350°F).
- 2Whisk the eggs with the sugar until the mixture is light and frothy.
- 3Add the melted butter, almond flour, all-purpose flour, baking powder, and salt. Mix well.
- 4Stir in the vanilla extract and mix one last time.
- 5Pour the batter into a greased and floured cake pan.
- 6Arrange the fresh figs, cut into quarters, on top of the batter.
- 7Sprinkle the coarsely chopped hazelnuts and a little extra sugar over the top.
- 8Bake for approximately 35 to 40 minutes, until the cake is golden brown and a toothpick comes out clean.
- 9Let it cool slightly before removing from the pan.
