Make perfect crêpes in the blink of an eye with the 4321 method! A magic scale-free formula: 4 glasses of milk, 3 eggs, 2 glasses of flour, and 1 tablespoon of sugar. Simple, fast, and foolproof.

Ingredients

Serves : 23 servings

  • 4 glasses milk
  • 3 eggs
  • 2 glasses flour
  • 1 tbsp sugar
  • 1 pinch salt

Instructions

Step 1

In a large bowl, combine the 2 glasses of flour, the tablespoon of sugar, and the pinch of salt. Mix these dry ingredients well.

Step 2

Incorporate the 3 eggs into the dry ingredients. Use a whisk to mix vigorously until the mixture begins to become smooth. (If lumps persist, use an immersion blender to smooth the batter.)

Step 3

Slowly pour in the 4 glasses of milk while continuing to whisk gradually to avoid forming lumps.

Step 4

Let the batter rest for at least 30 minutes in the refrigerator to allow the flour to fully hydrate.

Step 5

Heat a lightly oiled non-stick skillet. Pour in a ladle of batter and cook for about 1 to 2 minutes per side until golden brown.

Tips

  • Use a 30 cl (approx. 10 oz) glass for ideal proportions.
  • You can flavor the batter with vanilla extract or orange blossom water.
  • Use a very hot and lightly oiled pan for cooking.

Substitutions

  • Wheat flour → Cornstarch or rice flour — Works very well, tested by the author.
  • Cow's milk → Plant-based milk (almond, oat, soy) or water — Any type works.
