Ingredients

  • 3 eggs
  • 70 cl milk
  • 10 g oil
  • 50 g unsweetened cocoa powder
  • 40 g sugar
  • 1 salt (A pinch)

Instructions

  1. 1In a large mixing bowl, sift the flour and unsweetened cocoa powder together to prevent lumps. Add the sugar and a pinch of salt. Mix well until evenly combined.
  2. 2Gradually add the milk while whisking continuously to ensure a smooth texture without lumps.
  3. 3Pour in the oil and then the eggs. Mix thoroughly until the batter is smooth and homogeneous.
  4. 4If any lumps remain, run the batter through a blender or use an immersion blender to achieve a perfectly smooth consistency.
  5. 5Heat a crepe pan or non-stick skillet over medium heat and lightly grease it with a little oil or butter.
  6. 6Cook each crepe for approximately 10 to 20 seconds on each side. Repeat the process until all the batter is used, re-greasing the pan between crepes if necessary. (Watch the cooking process carefully; the dark color of the cocoa makes it difficult to judge browning by eye.)
